Agnon (Ethiopian Cabbage and Potato Stew)

This cabbage and potato stew is the mild everyday pot that keeps Ethiopian cooking within reach of a fasting day, because nothing in it is forbidden. The cabbage is cooked down until it is sweet and nearly transparent, and the potato thickens what remains. It is finished with berbere butter when butter is allowed, which is where its colour comes from.
