Pimientos de Padron (Pan-Fried Small Green Peppers)
Small green peppers pan-fried in olive oil with flaky salt, mostly mild with occasional heat.
Padrón peppers are a Galician tapería ritual, served in a shallow dish while you stand at the bar and drink. The gamble is the point, since a portion is likely to contain one pepper far hotter than its neighbours while the rest stay mild. Vinegar, coarse salt and a great deal of olive oil turn them into the ideal thing to eat between sips.
