Patatas Bravas (Spanish Crispy Potatoes with Spicy Tomato Sauce)
Crispy potato cubes served with a smoky spicy tomato sauce and a garlic aioli drizzle.
Patatas bravas is the Madrid bar snack nobody eats politely: potato cooked once, tossed in a smoky tomato sauce, then fried again so the surface blisters and cracks. The double cooking is the whole idea, which is why the pieces are cut large and never crowded in the pan. How sharp the sauce is remains an open argument between bars, and every one defends its own.
