Gambas a la Plancha (Spanish Grilled Prawns)

Gambas a la plancha are the plate that tells you whether a restaurant understands the Spanish coast: prawns onto very hot iron with barely anything else. Garlic and coarse salt go on only after they come off the heat, which keeps the flesh sweet and the shells red. Anything more substantial in the pan turns them into a different dish entirely.
