Salmon Coulibiac (Canadian Salmon and Rice Pie)
Salmon, rice, eggs and dill wrapped in pastry and baked golden.
This Acadian pie is the salmon equivalent of the tourtière, layered rather than minced, with rice cooked in the salmon broth so nothing is wasted. Wild Pacific salmon runs were so plentiful that no family considered the ingredient special, and the dish now survives mostly as festival food. The pastry stays simple because the filling is already rich.
