Quebec Yellow Split Pea Soup (Habitant Pea Soup)

Quebec keeps this soup deliberately thick, close to a purée, and traditionally serves it in small bowls with dumplings on the side to soak up the broth. The dumplings do the work of a thickener without clouding the colour of the peas. It is a winter soup that appears at table after a long Mass or a late Mass.
