Pato no Tucupi (Amazonian Duck in Tucupi Sauce)
Duck simmered in a dark cassava and spice sauce with rice.
Pato no tucupi comes from the Amazon basin, where tucupi is a dark cassava broth soured with allspice and orange peel and cooked down for hours. Duck is simmered in it until the meat falls from the bone and the sauce clings to it, then it is served with rice and cassava. The smell is powerful and pungent, and people either seek it out or avoid it entirely.
