Mousse de Maracujá (Brazilian Passion Fruit Mousse)

Passion fruit is grown along the coast and its tart pulp is used where a Brazilian cook wants brightness rather than sweetness. In this mousse the fruit is folded into whipped cream rather than cooked into a syrup, so it keeps a raw, almost fermented edge. It is served in a glass with the seeds left in, because the seeds are half the texture.
