Feijoada (Brazilian Black Bean Stew)
A slow-simmered bean stew with pork sausage, bacon and beef, served with rice and orange.
This is the standard form of feijoada: pork sausage, dried meat and fresh pork simmered with black beans until everything is soft enough to fall apart. The cut of meat matters less than the patience, and most cooks let it go for the better part of a morning. Orange, kale, rice and farofa go to the table alongside rather than into the pot.
